Comfort Food Friday

Hello! Happy Comfort Food Friday! Today I am sharing with you my recipe for quiche. I am a huge fan of quiche and it is such an easy dinner to make with this recipe - this one is for cheese and bacon quiche, you can use any fillings that appeal to you though - a combination of vegetables, meats, and or/cheeses.

The ingredients:


First, crack the eggs, and one egg yolk, into the bowl.


To be sure all of the egg yolks are beaten, I whisk them before adding the heavy cream.



Add the pinch of salt, pepper, and cayenne pepper to the mixture and whisk it all togther.


I do not pre-bake the frozen pie crust because I find that the edges of the crust burn while cooking the quiche if pre-baked.


I add the bacon first....


...then the cheese. I usually use finely shredded cheese, there was only thick shredded cheese when I went to the store this week. This is a mixture of cheddar and Monterey jack. You can use any type of cheese that you like though.


Pour the egg mixture into the crust.


Put it in the oven for thirty to forty minutes. The mixture should be firm when you shake the crust, no longer wiggly.


All done!


I serve it with a green salad or fruit salad.


Cheese and bacon is the only kind of quiche that John likes. My favorite quiche ingredient combination is goat cheese and caramelized onion which my older daughter first made for me and makes all of the time when she has friends for dinner - it's her favorite too.


I have a recipe for a delicious homemade crust that I will share another time. For a quick dinner, the frozen pie crust is the way to go, and the filling is just as delicious in either type of crust. I hope you give it a try and it becomes a staple in your house too. Please let me know if you do!
